The history of BBQ began close to 1 million years ago when the Homo Erectus, the people right be fore neanderthals, first had cooked meat.  How this happened, no one knows for sure.  But this first tasted cooked meat helped create an evolutionary advantage having the nutrients from the meat more easily extracted for energy as well as more calories available.  This in turn, helped develop larger brains.  200,000 years ago around the area of Carmel, evidence shows barbecue utensils as well as evidence of much larger animals showing the people liked to have much larger pieces of meat. 

For the United States and the history of Barbecue it was much developed in the south where pigs were a large presence in the food chain.  These animals were low maintenance and very convenient for Southerners.  Every part of the pigs were utilized.  The pigs were either eaten immediately or saved for later while certain parts, ears, and organs were transformed into delicacies.  Pig grilling because a large part of the social scene which ultimately led to southern barbecue.
